So it is the end of August, even so I refuse to give up on summer! I admit, I was a little nervous with the cool mornings we had last week. However the week ahead looks gorgeous!

With the temperatures rising and the promise (please be right weatherman!) of sun filled days, it seems only right to whip up something cool and refreshing.
Watermelon, and even better, frozen watermelon will fit that bill. Easily blended with almond milk, oats, and coconut my watermelon smoothie will keep you wishing for more hot summer days to come.
Keep things cool and simple with this goodie!
- 1 generous cup frozen Ontario watermelon chunks
- 1 cup almond milk
- 1 Tbsp large flake oats
- 1 Tbsp coconut, unsweetened, plus more for garnish
- Put all ingredients in blender, blend and enjoy
